LEAK TESTED
Every large Allary vessel is subjected to the waterproof test. The vessel is completely filled and pressurized for two days. Once the test has been carried out, the vessel is drained and ventilated before packaging.

ISO 22000 CERTIFIED
We obtained ISO 22000 certification in 2010 for the manufacture of oak barrels and large containers. This food safety management system guarantees traceability of all products used in the manufacture of casks and vats that are likely to come into contact with wines and spirits. It also ensures that all products are food safe. A food contact sheet can be supplied to you on request.

LARGE CUSTOMIZED VESSELS
The Tonnellerie Allary team is available to meet all your oak needs. We can create products that work with any constraints of the cellar, any custom dimension, specific capacities, and any special accessories you might need. And of course we can supply any number of barrels needed.

​For each large vessel request, a detailed 2D technical plan is produced to be approved by the customer.

DELIVERY, INSTALLATION AND REASSEMBLY ON SITE
The involvement of the Tonnellerie Allary team reaches all the way to the customer with barrel, vat, and cask installation in your cellars. In addition, if the constraints of the cellar so require, our team can disassemble, deliver, and reassemble any barrels or vats on site.

Setup & Care.

Keep your Allary barrels in pristine condition by adhering the following best practices: 
  • Store your barrels indoors away from odor and drafts.
  • The minimum humidity level must be 65%
  • Allary barrels in their packaging may be kept for several months.

All barrels are delivered ready to use. However, it is still recommended to evaluate each barrel carefully by:
  • Pour 20 - 30 liters of hot water into the barrel.
  • Splash the water around inside of the barrel to moisten then stand the barrel upright. Allow to sit for an hour or two on its head. Flip over and allow to sit for an additional hour or two on the other head.
  •  Empty water from the barrel. It is now properly hydrated. 

Alternatively, you may fill your barrel with cold water, keep it full for 24 hours then rinse and drain. We recommend consulting with your enologist for long term care and storage.
