Aging Vats
Used for white and red wines fermentation and/or aging depending on the stainless steel accessories selected. Stainless steel open top, stainless steel, or oak top with a stainless steel round trap to make punch down efficient with moderate oxygenation.
Equiped with a rectangle door at bottom level, a cooling/heating system, a draining valve, a racking valve, a tasting top, a thermometer or thermowell for temperature probe. For white wine fermentation, it is possible to install blades for stirring lees, giving more roundness and shading to the wine. All our vats are made on request to make sure the accessories meet your expectations and your needs.

Round Foudres
Foudres offer discreet oak impact due to the wine to oak contact ratio. Each Allary foudre is produced individually according to customer requirements. Capacity options range from 10hL to 60hL or to measure.

Oval Foudres
Oval Foudres offer the same wine aging functions as a round foudres with a different esthetic. Oval foudres suit higher cellars and are made for white wine fermentation or white and red wine aging. The oval foudre suits every style and wine-growing region. The wooden impact on the wine is more subtle than in a barrel due to the lesser surface wood/wine in the foudre. Foudres are made to order as per the customer requirements. From 10hl to 60hl capacity or custom-made.

Ovoïde Foudres
Made for white wine fermentation or white and red wine aging. The egg-shaped foudre suits every style and wine-growing region. The wooden impact on the wine is more subtle than in a barrel due to the lesser surface wood/wine in the foudre. Foudres are made one by one as per the customer requirements.
