Allary's Toasting Methods
ALLARY "HOUSE" (all fire)This classic style working with fire alone adds aromatic complexity and brighter mouth feel. The lighter toasts accentuate fruit and baking spice while the medium plus toasts move into toffee and classic toasted nuance. Our house toast preserves vineyard character. The oak used to fuel our toasting stations, are exclusively sourced from the same oak used for our barrels.
|
ALLARY "ALPHA" (with steam/water)A richer, balanced toast that accentuates blue and dark fruit. We lower the temperature of the flame and toast for a longer period of time. Spraying water inside the barrel during the final toasting stages opens the pores, rounds tannin and enhances dark notes. The oak used to fuel our toasting stations are exclusively sourced from the same oak used for our barrels.
