DIAMANT

This barrel represents Allary's masterful skill.  Made with the top 5% of the extra fine, clear, extra tight grain oak hand selected by Jacky & Gauthier Allary.  Created through a perfect combination of the finest oak available to the market, patient seasoning in our unique micro climate, three generations of savoir-faire and the respect for the art for the tradition.  Limited quantities.

PRESTIGE

100% extra fine gain from the historic forest of Tronçais.  A rich, noble barrel with perfectly balanced round tannin that integrates seamlessly.  A pure and beautiful expression of the highest level that can be achieved with Tronçais.

TRADITION

Capturing the spirit of the Allary cooperage with tight-grained oak from Center of France, Allier or Vosges.  Tradition offers subtle nuances, fine long structure and preserves the fresh aspect of your wine. Choices of forest and toast allow you to customize to enhance each varietal. For medium to long-term aging with refined results, you may have confidence in this barrel.  Oak for the Tradition barrel is available with 24 to 36 month natural, outdoor seasoning.

SPECIAL RED

A perfect barrel for those looking for flash, yet still within the realm of the Allary Spirit for refinement, quality and excellence.  A combination of our best tight grain oak from Centre France blended with well seasoned, medium grain oak from Vosges.  Longer toasting times, steam and expert oak selection achieve our goals for this innovative style.  A great value for those looking for impact and aging 8-14 months.

SELECTION

Tight grain Sessile Oak available from Centre France or Vosges.  The Allary “Selection” integrates early, adds roundness and fine tannin to your wines.  Highly successful with white and red wines alike where elegance, volume and sweetness are important factors. Ideal for 6-12 month élevage. ​

EVOLUTION

The best value in France. Mixed grain oak is selected from exclusive forests in the Center of France and Vosges. Our Evolution barrel offers impact, volume and weight. Perfect for shorter barrel aging programs and quick integration of oak. We have seen wonderful results with. higher toast level such as Medium + with steam, rounding the oak tannin with balanced medium grain structure.  Ideal for 6-12 month élevage.

Allary's Toasting Methods

ALLARY "HOUSE" (all fire)

This classic style working with fire alone adds aromatic complexity and brighter mouth feel. The lighter toasts accentuate fruit and baking spice while the medium plus toasts move into toffee and classic toasted nuance. Our house toast preserves vineyard character. The oak used to fuel our toasting stations, are exclusively sourced from the same oak used for our barrels.

ALLARY  "ALPHA" (with steam/water)

A richer, balanced toast that accentuates blue and dark fruit.  We lower the temperature of the flame and toast for a longer period of time. Spraying water inside the barrel during the final toasting stages opens the pores, rounds tannin and enhances dark notes.  The oak used to fuel our toasting stations are exclusively sourced from the same oak used for our barrels.
